CREAMY PARMESAN MASHED POTATOES
2 lb. red potatoes (about 6), cut into 1/2-inch chunks
1 cup fat-free reduced-sodium chicken broth
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Neufchatel Cheese, cubed
1/2 cup Reduced Fat or Light Sour Cream
3 Tbsp. Grated Parmesan Cheese
PLACE potatoes in large saucepan. Add broth; bring to boil. Cover; cook 15 min., stirring after 8 min. Uncover; simmer on medium-low heat 5 to 6 min. or until potatoes are tender and most the broth is absorbed. ADD Neufchatel; mash potatoes on low heat just until Neufchatel is melted. Add sour cream and Parmesan; mash and stir until potato mixture is blended and heated through. Serves 10 (1/2 cup each).

TRUFFLE COOKIES
1 1/2 pkgs (4 oz each) Baker’s semi-sweet chocolate, 6 oz total
3/4 cup butter
1 cup sugar
2 eggs
1 3/4 flour
1/2 tsp baking powder
crushed candy canes or Hershey Kisses
Microwave chocolate and butter in large bowl on high 2 mins or until butter is melted; stir until chocolate is melted and mixed well. Add sugar; mix well. Beat in eggs, 1 at a time. Add combined flour and baking powder; mix well. Refrigerate 2 hours. Heat oven to 350. Roll heaping teaspoons of dough into 1-inch balls. Place 2-inches apart on baking sheets (spray first). Bake 10-12 mins or until tops are set. Immediately add candy. Cool 1 min on sheets. Remove to wire rack to cool completely. Makes 44 cookies (2 per serving).

WHITE LASAGNA
2 lb Hamburger
1 Lg Can Cream of Chicken Soup
1 (Soup Can) of Milk
Lasagna Noodles (Cooked)
Mozzarella
Pepper
Fry Hamburger; Drain Combine Soup, Milk & Cooked Hamburger & Simmer Until it Melds Together Layer the Noodles, Soup/Hamburger Mix, Cheese & Pepper.. Repeat Until Done Cheese Should be Last Thing.. This Tastes Best if you Make the Day Before Bake Like You Normally Bake Lasagna. Don’t be Afraid to Add or Subtract Ingredients to Get what you Like in Taste…it took me a Few Attempts Myself
